Quinoa with Pineapple Salsa and Get Fit With Me and Punkrope!

Hi everyone! Fall is approaching which means I can get back to the gym!!

I keep forgetting to tell you that I have worked out three times a week, without missing a week, since January 1st. I have also been unable to go to the gym all summer, so how is it possible that I have worked out?

Easy.

I jump rope outside of my house or in the park.

I don’t know about you, but my time is limited and I need to find shortcuts for both cooking and fitness or else I won’t be able to do either.

Here’s the recipe that can make use of leftover quinoa  and pantry items which will allow you to make a healthy lunch or dinner in a pinch.

Pineapple Salsa with Quinoa and Pumpkin Seeds:

Serves one
One cup cooked quinoa (or cook it like rice, one cup dry quinoa to 1 1/2 cup water until water absorbs)
2 cups washed salad greens
Pineapple Salsa:
2 scallions, minced
2 cups diced fresh pineapple or canned
3 TBS sweetened grated coconut
2 tsp rice vinegar
Mix together and chill
Roasted pumpkin seeds
salad dressing
Steps:
1. On a plate, lay out the salad greens and add the quinoa on top
2. On top of the quinoa, add a desired amount of salsa
3. Top with dressing of your choice or my maple soy dressing:
4. Top with roasted pumpkin seeds or any other crunchy nuts or seeds
