Quick Cole Slaw For a Crowd and My WASTEFUL Husband!


Hi everyone. I was going to a potluck dinner the other night and planned to make my easy edamame dip http://takebackthekitchen.blogspot.com/2008/01/little-planning-goes-long-tasty-way.html. I boiled the beans but they smelled sour. I tried them and they were indeed sour, but how?? They were frozen.

It turns out that my husband was using them to ice his back, letting them thaw out and then freezing them again , over and over to my dismay! Ooo, he makes me so mad! I had already told him to use the freezer burned frozen peas for that!

Anyway, I was in a big rush so I decided to make a quick slaw with a bunch of staples in the house which took all of 5 minutes.
All to say, no need to panic and rush to the store for some unhealthy food item. Look in your pantry and fridge, see what you have and get creative. Enjoy!

Slaw in a pinch:

1 small cabbage, shredded
-about 6 cups shredded
1/3 cup mayo or light mayo
1 TBS Dijon Mustard
1-2 TBS honey
2 TBS dried currants
salt to taste-start with 1/4 tsp
pepper to taste
optional hot sauce like Tabasco or preferably Sriracha hot sauce

Mix shredded cabbage with the mayo until fully coated. Add remaining ingredients, stir to combine and chill for 1/2 hour if you can. Enjoy!
