Hi everyone. One way to get over your obstacles to cooking is to talk about food with…anyone! I posted about whether people would cook with persimmons on my facebook page and over 20 people responded! It gave me the confidence to put more persimmons recipes on my blog.
Speaking of using social media……I came across a wonderful blog and an article about some local young girls raising money for Angelman’s syndrome. The dad of a local child wants to raise funds and so do these girls who are helping the cause by making soap. Back to the persimmons….My friend Sarah Damaskos suggested I make cookies with the persimmon pulp so here is my recipe. I hope you enjoy them!
Persimmon Cookies:
3/4 cup sugar
1 cup white whole wheat flour
1/4 cup softened butter
1/4 cup persimmon pulp-peel the persimmon and take out the pits and mash the pulp or puree
1 egg
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp connamon
1/4 tsp nutmeg
1/8 tsp ground cloves
1/2 cup chopped dried cherries
1/2 cup chocolate chips
Preheat oven to 350 degrees
Mix the sugar, flour, baking soda and spices together.
In a separate bowl, combine the softened butter, the persimmon pulp and the egg until combined.
Add in the cherries and chocolate chips
Combine contents of both bowls until smooth
Form one inch balls and lay out on a parchment paper lined cookie sheet and bake for 15 minutes. Serve when cooled.

Well, I guess my daughter was signed into her google — erase that comment please! I've never made a single thing with persimmon pulp. Looks and sounds interesting! Thanks for sharing.
