Hi everyone. I just got back from my first trip to Disney World and I must say, I was pretty impressed with…the food! Yes! There were actually a surprising number of healthy options for the adults; Whole wheat turkey wraps, salads everywhere, but not so much for the kids, or at least my kids. The standard fare in every pit stop for children was burgers and chicken nuggets. This was a relief, I must admit, since my kids are rather “particular” when it comes to eating out (ex: “I don’t really care for fruit when it is outside of our house, Mom” -the 7 year old.) They will, however, always eat chicken nuggets with ketchup.
Although I was relieved because my kids would get to sustain themselves on SOMETHING while they walked 200 miles within each park, I was a bit dismayed by the fact that children’s menus always consisted of chicken nuggets and fries OR carrot sticks. There was no way they would eat those carrot sticks, especially when they saw those other people’s kids eating fries. And if you are a loyal Take Back the Kitchen reader, you will also know that my kids only eat brocolli. Suffice it to say that it was chicken-nuggets-this and chicken-nuggets-that, all weekend.
Anyhow, it strengthened my resolve to phase out those darn chicken nuggets once and for all. But how???
Here is another healthier yet fun chicken nugget alternative. I would like to believe that my mother made this up so PLEASE DO NOT post a comment that this was one of your childhood favorites. A girl’s gotta believe, doesn’t she?
Cornflake crusted Chicken:
Take a few cups of cornflakes , put in a ziploc, get all the air out, and crush them with a can rolling over them or have your kids stomp all over them until they are crunched up however you like them. Put some of the flakes in a bowl.
(they sell healthier cornflakes at Whole Foods but corn is corn)
Take some chicken legs or any other chicken parts, wash them and then dry with a paper towel
Take a couple of eggs or even egg beaters(just the whites), beat them and put in a shallow bowl
Dip the chicken parts in the egg and then the cornflakes. Sprinkle with a little salt and spray with a little olive oil if you like, not necessary
Lay chicken parts on parchment paper covered baking sheet and bake at 425 degrees for 1/2 hour to 40 minutes. You can cover with tin foil if cornflakes get too brown while chicken is still raw. Remove tin foil at the very end so chicken gets golden and crispier.
P.S. One highlight on the trip was that my son got excited when he saw McDonalds’ golden arches and my daughter said , “euww, that is so unhealthy”. The brainwashing is working…
Glad to hear you enjoyed Disney…still haven’t ventured there with Jake, but plan on it one of these days. He too is a nugget fan, so I am glad to know he will be able to sustain himself when we go.
As for cornflake chicken…yum, sounds much healthier than the version my mom made when we grew up…no cornflakes on our chicken, but rather potato chips! So as far an I know…your mom rocked with the healthier alternative to what I thought most people ate which was potato chip chicken!
I tried the cornflake chicken and it was so easy and delicious. Next time I’m going to try it without the skin. Since signing, I have really been inspired to cook more often and healthier choices. My husband is impressed and I’m so proud of myself. Thanks!
