Bacon Wrapped Stuffed Jalapenos and I KNOW You Can Make These!

 

Hi everyone!  When looking at the photo to the left, do you think to yourself, “Wow, I wish I could make a fancy hors d’oeuvre like that!”?

Well, I am going to show you how.

One does not have to be a gourmet chef by trade or hobby to prepare and present an impressive dish.

All it takes is the confidence to know that if you follow instructions, practice and know that there is always a next time to improve that you will eventually succeed in being able to cook the way you would like. 

By now you may know how much I love jalapeno poppers.

Here is a healthier take on them that is ideal for your indoor or outdoor grilling (by healthier I mean grilled not deep fried):

Bacon Wrapped Jalapenos Stuffed with Cheese :

Ingredients:

10 jalapenos

Approx. 8 oz. cheese of your choice, shredded-I used Queso Fresco which is very Mexican-y but you can use any kind you like)

10 slices of bacon-I used turkey but you can use tofu bacon or the real, porky kind

Steps:

Grill the jalapenos until the skin starts bubbling and starts to char.

Remove them from the heat and let them cool down.

When they are cool, slice them lengthwise  being cautious NOT to slice all the way through the peppers and remove the seeds with the spoon. Be careful not to touch the seeds because your hands may burn a little from their heat.

Take about 2 tsp or as much as you can fit of the cheese and stuff it in the peppers.

Take a slice of bacon and wrap it around the stuffed jalapeno so that you are keeping the cheese inside. Make sure you lay the peppers down with the seam side down of the bacon. Stick a tooth pick in each one so they stay put.

Grill on an indoor or outdoor grill until the bacon is crispy and serve. YUM!!!
