Since it’s June, I’m posting an old pic of my dad who would have LOVED these pops. Pops for pop.

Looking for an easy way to avoid all of the ice cream temptations that will be around us
with summer around the corner? I have a very simple alternative; try these mango
coconut popsicles and stay on track healthfully.
Some coconut milks are creamier than others, such as Mike’s organic Curry Love
coconut cream or just your basic coconut milk by Chaokoh that you can find in most
Asian food stores or on-line. Either way, you will feel virtuous for not going down the
sugar filled, processed and additive ice cream route! Enjoy….

Mango Coconut Pops:

3 cups frozen mango chunks
1 cup coconut milk or 1/2 cup coconut cream
1/2 tsp vanilla extract

Steps:

Blend all the ingredients in a powerful blender.
Pour into 8 popsicles molds with popsicle sticks.
Freeze for at least 3 hours or overnight and enjoy!
