Hi everyone and happy Independence Day. I am going to categorize this post as one of those posts discussing turning a mistake into a genius like culinary creation.
So there we were, hulling strawberries to try and have a healthier birthday party for my 4 year old when genius struck (O.K., I did have Ana, the Sevillana, help me but she insisted on helping!). The holes made from my new Oxo brand strawberry huller gizmo were a little large and somewhat unsightly. That’s when the idea hit me: Why not fill those too-large holes with chocolate instead of covering them with the chocolate? So simple, so beautiful, so, so, so delicious and clean.
Many of you ladies must admit that you avoid indulging in chocolate covered strawberries at a fancy affair because you just look like a messy lady in a fancy gown. It’s not worth the messy risk.
You can put any chocolate in the strawberries but here are 2 suggestions:
Did holes in the strawberries with a knife or strawberry huller, about the size of a centimeter or so.
Just melt chocolate chips with a little butter and stir over low heat until combined. Let chill in the fridge until it is less gooey and then stuff in the strawberries. Lay Strawberries on wax paper on top of a plate and let chill for at least 1/2 hour. Serve and enjoy.
The following is the filling I prefer because it is also a cake frosting’s leftovers:
Chocolate Filling:
2 TBS sweet butter
3/4 cup semisweet chocolate or chocolate chips
6 TBS heavy cream
1 1/4 cups SIFTED (must sift because we don’t want lumps) powdered sugar
1 tsp vanilla and extract
Stir all ingredients together over a low flame until fully combined. Place chocolate mixture in fridge until thick enough to spoon into strawberry holes and then chill strawberries. Enjoy!
