Gluten Free Almond Orange Cookies

Hello Everyone!

I am hoping that you won’t make fun of me for calling the following recipe “cookies”. Sometimes I think it best to refer to a food item as something other than what we’re trying to emulate, if it’s features are far from the original item. Like balls of healthy stuff.

I am, however, referring to these as cookies because they are shaped like cookies and have sweet chocolate in them. Feel free to change the name but I’m keeping it.

Gluten Free Almond Orange Cookies

Wet:

1/3 cup almond butter

1/3 cup coconut sugar (white sugar if you don’t have coconut sugar)

1 tsp vanilla extract

1 egg, beaten

Dry:

1 1/2 cups almond flour

3 Tbs cassava flour  (coconut or almond flour if you can’t get cassava flour)

1/2 tsp baking powder

4 oz. orange chocolate bar, chopped (or dark chocolate chips and 1/2 tsp orange extract)

Steps:

Preheat oven to 350 degrees.

In a large bowl, combine all the wet ingredients.

Add in the dry ingredients and mix until fully combined.

Add in the chopped chocolate and orange extract if you are using.

Place 2 Tbs sized balls on a parchment paper lined cookie sheet, 2″ apart.

Place baking sheet on the middle rack of the oven and bake for 10 minutes.

Remove and let cool.
