I love to cook a lot. On fathers day-BINGO! Fathers day, a day when dads are free, when they can go out and do what kids and moms don’t know about(and probably never will). But when my dad is home, it’s my joy to cook for him. He likes almost every food I make. Even though I will never be a dad, since I’m not a dude, I love to make mine happy. HAPPY FATHERS DAY!!!!!!!!! Here is the delicious recipe:
Cornmeal Pancakes:
1 cup whole wheat flour
1 cup white flour
1 cup yellow corn meal
2 tsp baking powder
1 tsp baking soda
2 tsp salt
1/4 cup sugar
2 eggs
1/4 cup olive oil
1 cup buttermilk
2 cups skim milk
Combine all dry ingredients together in a bowl.
Combine all wet ingredients in a bowl.
Mix contents of both bowls and stir until smooth, no lumps or just small ones.
Heat up a frying pan or griddle over medium to low flame. Put in a tsp. or so of butter or olive oil until hot and pour about 1/4 cup of batter for each pancake. Flip when bubbles start to appear in the center of the pancake and let sit for aq minute or so on the other side.
Garnish with strawberries and serve with maple syrup.
