Hi everyone! Our next celebrity Home Chef is a graphic designer and non-profit executive. Originally from CA, Jackie Wolf and her son love to make the Take Back the Kitchen froggy pancakes! Now that her son can’t have cheese, she does not use it but he still likes them. She ran out of spinach once and used broccoli and he liked them just the same. Try them for yourselves and enjoy! 1 cup prepare /made from scratch pancake batter
1/2 cup cooked spinach
1/4 cup sunflower seeds
1/2 cup grated cheese-I use cheddar but can use any kind
In a blender, fully puree the spinach and pancake batter until there are no green pieces and the batter is fully green.
Remove batter from blender and stir in sunflower seeds and grated cheese.
Heat up a frying pan over medium heat and add a tsp. olive oil. Make pancakes as you normally would and serve pancakes hot or room temperature. Makes about 10 med.-large pancakes
NOTE: Make a few batches and flash freeze pancakes (lay them on a cookie sheet in the freezer for 1/2 hour so they are individually frozen and then put them in a tupperware or ziploc bag in freezer).
