Hello everyone,
Oh, this weekend was amazing! We had our annual Parents Who Rock backyard fundraiser and the performers were so talented and generous with their time. As I do every year, I just had to make a scrumptious lunch for our beloved sound man, Ed Carine. He works the entire day doing sound but also brings the equipment from his organization Terry’s Serendipity Cafe (find them on facebook) which is an evening music association/hangout for High School students. Ed oversees it but it’s really student run.
We all love Ed so much and want him nourished for the day so I created this easy to eat chicken salad that I made into a sandwich (his other option was spaghetti with meat sauce but he thought it would be too challenging to eat while doing the sound). It’s really good so try it!

Awesome Ed Carine’s Chicken Salad:
2 1/2 cups chopped, cooked white meat chicken
1/3 cup plain Greek yogurt
1/4 cup mayonnaise
1/3 cup ginger preserves or any other preserves that you like
1/2 tsp ground cumin
1/4 tsp salt
Fresh black pepper to taste
1/3 cup sliced almonds, toasted
Steps:
In a large bowl, mix all the ingredients together, chill and serve as a salad with crackers, on top of fresh leafy greens or between bread for a sandwich!
