Cranberry Bread, Support and Love for 2009 Cooking, and a Classic Video

Hi everyone and Happy New Year! Please click on the title of this post to read more. Well, I could tell you about how I spent a really exciting New Year’s eve or I could tell you the truth: My kid had an accident in his pants and I had to give him a shower on the spot and I passed out at 9PM.

I would rather tell you about how I plan to spend 2009 helping all of you become the most comfortable home cooks you can be and to broaden your cooking repertoires way beyond what you had ever anticipated. We all have it in us, and I look forward to providing all of you with the support and cooking love you need to be all you can be in the kitchen.

The following is a recipe for cranberry bread accompanied by a video of some very cute people demonstrating the age old frustration of whether or not we need to wash produce. Enjoy it and enjoy the beginning of 2009.

Take Back the Kitchen Cranberry bread:

2 cups flour
1/2 cup white sugar
1 TBS baking powder
1/2 tsp salt
2/3 cup pureed orange or clementines, about 1 1/2 big orange or 3 clementines
2 TBS apple juice (O.J. if you don’t have apple juice)
2 eggs beaten
3 TBS melted butter
1 1/2 cups cranberries chopped in a food processor
2 tsp lemon zest

Preheat oven to 350 degrees. Mix dry ingredients together in one med. sized bowl and then mix wet ingredients in another. Combine wet and dry ingredients until combined. Pour batter into greased bread pan and cook until knife comes out clean, about 50-55 minutes.

  1. I love cranberry bread and in fact have some still in the freezer that I made in bulk (with friends of course) for the holidays. So zesty and delicious! Thanks for sharing — your recipe is a new twist. I’ll have to try it.

  2. My 5 yr-old son LOVED the video post. We have watched it several times, each time resulting in peels of laughter! We can’t wait to try the Cranberry Bread too!

  3. Tonight I baked a birthday cake from a box with my kids and then I made this delicious bread. I think its just the right balance of junk food and good food!
