Wendy Inspired Pea Soup and My Garden Constraints…

O.K., now I LOVE pea soup but I forgot all about it until my friend Wendy told me she’s been making pea soup. It is so darn simple and quick and very tasty too.

Wendy Inspired Pea Soup:

1 1b dry green split peas (2 cups dry)
1 medium chopped onion
2 medium diced carrots
1 cup chopped kale (a few leaves) (optional)
1 cup chopped mushrooms (optional)
1 tsp cardamom
2 tsp J & D bacon seasoning-optional and can get on line-vegetarian!!!
1/2 tsp ground black pepper
1 tsp salt
1 quart chicken broth or vegetable broth
1 quart water plus 2 cups later if it gets too thick

In a big soup pot, heat up onions, water and chicken or veg. stock until it boils
Add dry peas and carrots and stir
Add salt, cardamom, salt, bacon seasoning if using and black pepper
Let simmer until peas and carrots are tender, about 30-40 minutes
Add mushrooms and Kale if using and cook for another 20 minutes
Adjust seasonings and serve. Yum!

  1. Been in bed for an hour, avoiding reality. Now getting up to make pea soup. Seriously! It took this recipe to get me upright. Off to start chopping.
