Yes, I know what you’re thinking…GROSS! No, not gross. These are absolutely delicious! They are moist and I couldn’t stop eating them!
Sir Kensington’s is a brand of mayo that my kids absolutely love so when I was asked to try their products (they sent me some for free), I was all in. I have been vegan for most of February to decrease my carbon footprint as well as trim my waistline (not working, by the way), and these cookies rocked!
I also used the vegan mayonnaise with equal parts mayo to equal parts chipotle bbq sauce for my kids’ chicken and they loved it!
Vegan Sir Kensington’s Mayonnaise Chocolate Chip Cookies!
2 cups flour
1 cup sugar
1 tsp baking soda
1/8 tsp salt
1 tsp vanilla extract
1 cup Sir Kensington’s mayonnaise!
Add last:
12 oz. carob or chocolate chips (am I the only person who likes carob?)
Steps:
Preheat the oven to 350 degrees.
Line a baking sheet with parchment paper.
In a large bowl, Combine flour, sugar, baking soda and salt.
In a separate bowl, combine the mayo and vanilla extract.
Combine wet with dry ingredients and add in the chips.
Roll the mixture into walnut sized balls and place balls on lined baking sheet at least 2 inches apart.
Bake for 12 minutes and let cool.
