Tuna with Tarragon and Cracked Pepper and Assembling IS O.K!


Hi everyone. Sometimes some of my clients feel self conscious about the fact that they” assemble” meals as opposed to “cook” meals. If you are assembling healthy ingredients, you are just as nurturing, healthy and creative as the next guy.

Please boost your cooking confidence with this simple and healthy recipe that tastes like a sandwich in a fancy restaurant. If you don’t have a friend Ki like I do to give you some fresh tarragon from her garden, buy some!

Simple Tarragon Tuna Sandwich for Two:

2 cans tuna in water, drained
2 TBS light mayo
1 TBS chopped, fresh, washed Tarragon
1/8 tsp salt-more to taste
1/8 tsp cracked black pepper-more to taste
Dijon Mustard to taste
4 slices hearty whole grain bread
optional sliced tomato and lettuce

Drain the tuna and place in a large bowl. Add in the mayo, tarragon,salt and pepper. Stir until combined.
Spread desired amount of mustard on bread, lettuce and tomato if using and top with other slice of bread. Repeat with other sandwich.
