Hi everyone. I was reading People magazine at the dentist and I have good news: Ricky Martin came out of the closet! Ricky Martin is an inspiration. If he can come out of the closet and risk his career, you can do it too. Not come out of the closet, unless you want to of course, but do something that is for the good of your family, even though it may seem tough. I am talking about taking the time and energy investment to learn to cook, of course.
Ricky said he felt it was time because he now has toddler twins and did not want his lies to tarnish their glow. I always liked him-that ‘livin’ la vida ” is still in my head after 10 years.
Let’s follow his lead and take control of our lives. How about tonight, with this phenomenal Spinach Salad. 3 people over the last 2 years have given me this recipe so thank you Rudy’s wife, Katy and Melina. My recipe is a combination of all three with a few additions. I really hope you like it.

Baby spinach, Strawberry and Goat Cheese Salad
Salad:
1 lb of fresh strawberries, washed, hulled & sliced
1/4 cup sliced almonds, roasted and salted sunflower seeds or pumpkin seeds
7-8 oz of washed baby spinach or other dark, leafy greens
optional: sprinkle of goat cheese or take about 2 TBS of goat cheese, form into a small patty, coat in bread crumbs and brown in a little olive oil-YUM!
For the dressing:
3 tablespoons honey
1 TBS mayo
1 tablespoon Dijon mustard
1 TBS white distilled vinegar
2 tablespoons finely chopped red onion *
1 TBS poppy seeds
pinch of salt
pinch of garlic powder
1/2 cup olive oil
Combine salad ingredients, place goat cheese on top and pour on desired amount of dressing.
