Hi everyone! I am enjoying cooking a nice little lunch for myself while the kid are at camp. I just take out a few leftovers and frozen foods to make myself a tasty treat. Throw in a couple of pantry item condiments and I’m good to go. Try this easy Chinese dish!
Steamed Shrimp with Broccoli and Cashews:
4 oz. frozen, defrosted cooked shrimp
1 cup chopped, cooked broccoli
2 tbsp chopped cashews
2 tsp hot mustard
1 tsp soy sauce
1 tsp canola oil
1/2 cup steamed brown rice
In a medium sized frying pan, heat up the oil.
Add in the leftover broccoli and saute for a few minutes.
Add in the hot mustard and the soy sauce and stir.
Add in the cooked shrimp and stir until heated through.
Top with chopped cashews.
