Special Family Mac and Cheese and Reuniting Feels So Good…


Hi everyone! Well, here is the story I promised you from my last post about my mystery blog guest and her very special recipe.

When I was 10 years old (seen in the photo above with my Farah Fawcett hair), I started babysitting for a neighborhood little girl, Tara, who was only 4 at the time. ‘Tis quite shocking that I would be babysitting at that age, is it not??

Well, I picked Tara up every day after school and stayed with her until her mom came home. I was very close with both Tara and her mom, Frances. I babysat for her for years until I needed to spread my teen wings and engage in more age appropriate or inappropriate behaviors.

Well, fast forward THIRTY years! I have been googling Tara over the years with no success in finding her (she only uses her married name now).

Three weeks ago, however, I get an email from a friend from Junior High, Dan, who sends me the above photo and tells me he is dining at Tara’s house in a nearby suburb and they just discovered that they both know me. What are the odds?!

We immediately set a date to meet, are reunited, and (this is where the food comes in) I tell Tara that her mom, who has since passed away, used to make a delicious mac and cheese. She exclaims that this is a family favorite, and I ask her to bring it to a dinner I will host at my house where she and her family are invited.

Suffice it to say that our families loved one another (her kids are too cute) ,dinner was delicious, and we make a pact to stay in touch since we only live six miles apart! The Mac and Cheese has come full circle.

KNOWINGS FAMILY MAC & CHEESE

1LB OF MACARONI
2LB OF EXTRA SHARP CHEDDAR CHEESE (YOU WILL NEED TO GRATE THE CHEESE)
1 CAN OF NON-FAT EVAPORATED MILK
2 EGGS
1 STICK OF BUTTER
SMALL AMOUNT OF SALT AND PEPPER

1) PRE-HEAT OVEN TO 350 DEGREES
2)BOIL MACARONI UNTIL AL DENTE AND THEN DRAIN. WHILE PASTA IS BOILING GRATE THE CHEESE.
3) ONCE DRAINED PLACE MACARONI IN A 13 X 9 PAN AND ADD IN A HALF POUND OF CHEESE, MILK, 1 STICK OF BUTTER AND SALT AND PEPER AND STIR TO CREATE A SOUPY MIXTURE.
4)MAKE SURETHE MACARONI MIXTURE IS COOL AND THEN ADD IN EGGS AND STIR TO CREATE A SOUPY SAUCE.
5) SPRINKLE THE REMAINING HALF POUND OF CHEESE ON TOP TO CREATE A LAYER OF CHEESE (YUM)
5) PLACE IN OVEN FOR 45 MINUTES AND BAKE UNTIL THE CHEESE IS GOLDEN BROWN

THIS CAN BE A PRETTY HEAVY SIDE TO HAVE WITH DINNER SO SERVE AS MAIN COURSE WITH A SALAD.

  1. Thanks for this! My parents passed away almost 5 years ago. They remarried after being separated for 25 years. This was the wedding song I chose for them.

  2. What a cute story Alma! Btw, you look about 14 in that photo, not 10! You had the hair I always wanted. Sigh. Glad you reunited–how great!
