Shrimp Avocado Salad, Rosa Parks and Starting Your Own Movement

Hi everyone! Today is MLK day and the inauguration of our President.  So much to think about.

We have come so far as a country and as a people not only by individuals , but by masses of people doing their small part to make major change happen.

Below is a great piece about the  behind the scenes movement by many, many years leading up to the bus boycott,  to make Rosa Parks, the single person, to have been able to make such an impact on our country:

Thanks to Michelle Obama  and all the food activists for helping our country make better food choices.  You can start a movement in your own family with small steps. The healthy recipe below is my tribute to all of you:

Shrimp Avocado and Cashew Salad:

6 -8 cups of dark leafy greens, washed and dried

1/2 cup cooked, medium sized chilled shrimp

1/2 avocado, diced

2 TBS cashew halves

one clementine, sectioned

Dressing:

Drizzle of olive oil

juice of 1/2 lemon

salt and pepper to taste

Combine all salad ingredients, drizzle with olive oil and lemon juice, top with salt and pepper.
