Savory Cheddar Cookies and the Garbage Cake

Hi everyone. You may not believe this, but my friend Pamela convinced me to throw away a huge cake this weekend. I actually threw it in the garbage. Me, the woman who tries to use every ingredient or donate every morsel of food so as not to waste actually pitched a cake.

Why? When none of my friends wanted to take it home, my neighbors were away, and I had already saved my kids a piece, there was truly no reason to keep it that I could justify. It was delicious but from Costco so maybe had some hydrogenated oils-I never checked the label although I almost always do. I must say, it felt good to get rid of it and it did save me a lot of fridge space.

Here is a Cheese Cracker recipe that the same Marianne of Chicken Salad fame gave me. They are so good that Brian called me on my cell phone to tell me they were one of the best things I’d ever made. They are great snacks or hors d’ouevres:

Savory Cheddar Cookies (or Cheese crackers)

Preheat oven to 375

2 sticks of Butter
10 ounces Cracker Barrel Cheese softened, or 2 Cups Grated Cheddar Cheese (or any other hard cheese)
2 cups of Flour (I supplemented 1/2 cup of whole wheat flour for the white)
2 cups of Rice Crispies (I use the “healthier” ones from Whole Foods)
1/2 tsp Dried Mustard
1 tsp salt
1/4 tsp red pepper flakes
dash Worcestershire sauce (I didn’t use it at all)

Cream butter and cheese in mixer. Add seasonings. Blend in flour slowly. Stir in Rice Crispies. Form tsp size on parchment covered cookie sheet. Flatten with a fork or leave in ball shape. Bake 10 minutes or so and enjoy!
P.S. To answer a comment, dark soy sauce has molasses in it, one can buy it at any big Asian Food store and it does make a difference in your recipe since it adds a distinctive flavor.
