I facilitated a healthy lunch workshop at seamless.com, ate at the fabulous Dirt Candy in the East Village and held a cooking demo in Williams-Sonoma today making easy and sophisticated appetizers. Below is yet another easy way to create a healthy , quick and delicious meal with all those zucchinis around this summer. Enjoy!
Sauteed Zucchini with Fresh Peas , Goat Cheese and Mint:
3 cups fresh zucchini, diced
1/2 cup fresh English peas (frozen and defrosted if you don’t have fresh on hand)
1/3 cup crumbled goat cheese
1 TBS fresh, chopped mint
salt
freshly ground black pepper
1-2 tsp olive oil
Steps:
In a medium sized saute pan over medium heat, heat up one tsp. olive oil
Add in the diced zucchini and saute for a few minutes until browned, add more oil if need be
Add in the frozen peas and saute for a few minutes or fresh if you are using
Remove from heat and sprinkle on goat cheese and mint
Season with salt and pepper and serve

Mm sounds good Can I leave the skin on the zucchini?
