One thing I did not put in the article was about the need for healthy food! For corn’s sake, what was I thinking? It is one of the most important ways for us to be at our best. Try to cook this tasty meal for yourself and see what I mean.
Spicy Quinoa with Chipotle Chicken:
*1 tsp olive oil
*1 tsp chipotle sauce, more to taste
*2 1/2 cups cooked quinoa (If made from scratch, boil 1 cup quinoa to 2 cups water until quinoa is tender)
*2 cups cooked, chopped chicken
*1/2 tsp kosher salt
In a medium sized frying pan, heat up the olive oil.
Add in the chipotle sauce and stir.
Add in the cooked quinoa and stir so that all the chipotle sauce has coated the quinoa.
Add in the chopped, cooked chicken and salt and stir to heat through.
