Hi everyone! I hope everyone had a wonderful holiday and continued or started some new traditions.
For many of us, holiday traditions make us feel warm and fuzzy and connected to the past.
Growing up we listened to Neil Diamond during the holidays, Leather and Lace by Stevie Knicks during X-mas 1986 or ’87, and for this year, we watched, as an entire extended family, a marathon of the Long Island Medium (Teresa Caputo) on TLC and made and ate peanut butter chocolate balls adapted from many a pinterest recipe.
If you have not watched the Medium, you have not lived. What, you don’t believe in Mediums? Well, even if you don’t, please know that this woman is spreading the love by helping people feel better about their dearly departed.
I like to think that I am spreading the love and hopefully helping you start a new holiday tradition by sharing these pretzel cornflake balls.
P.S.Even if you are reluctant to watch the Medium, please watch it and let me know what you think -you will LOVE IT!!!
Pretzel Cornflake Peanut Butter balls:
½ cups Creamy Peanut Butter
5 Tablespoons Confectioners Sugar
1 Tablespoon softened butter
3/4 cup Crushed pretzel crumbs
1/4 cup crushed cornflakes crumbs (I used these b/c I ran out of pretzels and it made a delightful crunch!)
1/2 cup, maybe more if needed, of dark chocolate chips, melted in a double boiler or stainless steel bowl over a pot of boiling water
Take all the ingredients except for the chocolate, mix and form into one 3/4 inch balls and lay on a wax paper lined cookie sheet.
Heat up the chocolate and when melted, roll the balls in the chocolate with two spoons or toothpicks or chopsticks. Place on the cookie sheet and repeat with the rest of the balls.
Place in the freezer until chocolate hardens.

Those were some delicious peanut butter balls. I can’t wait to make them myself. How big were the chunks of pretzel? 1/4 inch?
Hello Madame X. The pretzels were crushed to crumbs but some little sticks got through. Enjoy!
