Pomegranate and Currant Salad and Make it Easy on Yourself

Hi everyone and happy post Thanksgiving. I hope yours was as nice as ours. I am very grateful for good friends and family, awesome food and much easier seeded pomegranate seeds that I purchased from Costco. What a time saving treat for a festive looking salad.

If you can’t buy the seeds already taken out, do the trick that my friend Leslie told me about: cut the pomegranate open and let the two halves soak in water. The seeds will rise to the top and the white part will loosen up a great deal, enough to easily remove the remaining seeds.

Pomegranate and Currant Salad:
(can get seeded at Costco)
one and a half cups pomegranite seeds
3/4 cup tiny diced cheese of your choice-I used Spanish Tetilla Cheese
3/4 cup black currants
Carton of washed organic mixed greens from Costco or elsewhere

Miso dressing:
1/2 cup white miso paste
1/2 cup canola oil
1/2 cup water
1 TBS honey
pinch of salt

Puree until smooth

Mix cheese, currants, pomegranate seeds and lettuce together in a big bowl. Pour dressing on top and toss. Enjoy!
