Hi everyone. I hope the start of school for those of you with youngsters has been seamless. I have been so nuts with coordinating pick ups, drop offs and buying school supplies, that I was ecstatic when my local food coop box came this week. It allowed me to have fruit and vegetables so that I did not have to go to the store. Who’s got time for that!
I decided to create a plum salad in honor of my Dad, see the photo above, who LOVED plums. He also loved peaches and fresh corn. To tell the truth, my father loved most foods and relished everything having to do with food. (He also loved relish.)
One of my favorite memories of my Dad was his annual August question,
“So, what’s on the menu for Thanksgiving?”
Here’s to you, Dad…
Plum and Butter Lettuce Salad:
3 cups chopped butter lettuce
1 plum
shaved parmesan
2 TBS sliced almonds
drizzle sweet vinegar, like chocolate vinegar
drizzle good olive oil
Pit the plum and chop into small chunks. Chop up and wash the butter lettuce. Dry and place in a medium sized bowl. Add plums, nuts and shaved Parmesan. Drizzle with the oil and vinegar.
Serves 2 as a side salad

Awww…that's a sweet memory, Alma. Plums are also really good cut up in plain Greek yoghurt with finely chopped fresh mint and a little sweetener (honey, sugar, or Splenda, depending on your tastes).
