Please FREEZE the Leftovers!!!


Hi everyone! I hope you had a wonderful Thanksgiving! We went our friend’s Mark and Rachael Egan’s house and had a truly memorable feast with great food and great company. See the pictures at the TBK facebook page:

I just want to remind you to chop up and freeze your turkey and your carcass. Many of us make the big mistake of letting it sit in the fridge with good intentions of eating it all week. What often happens, however, is that we get sick of it, leave it too long and we have to eventually throw it out.

If you don’t think you will eat it all, chop up and freeze some in Ziploc bags for later use to make:

turkey pot pie
turkey lasagna
turkey chinese dumplings (just get some wonton wrappers)
turkey tetrazzini
turkey meat sauce for pasta
add ins for tacos, burritos and quesadillas
salads
stir frys
sandwiches!
turkey soup (freeze the carcass and later make a stock, too)

  1. all sound good, except for the turkey tetrazini- that was the absolute torture of my childhood. hated it so much! I should probably give it another try as an adult… We froze the ham bone too, for bean soup. Glad you had a good time.

  2. My husband makes a wonderful turkey tetrazini the Sat. after Thanksgiving. His recipe, modified to be lower fat, comes from the 1940 Boston Cooking School book that belonged to his grandma…
