Pasta with Fresh Herbs and Ricotta and Do You REALLY Want to Fix Your Problems?

Hi everyone. My daughter’s 6th grade teacher has us keep tabs on the students by sending us an email everyday. If my teachers had done this in middle school, I wouldn’t have gotten into so much trouble! I love the quote he sent yesterday:

“We can’t solve problems by using the same kind of thinking we used when we created them.” – Albert Einstein

If we keep making the same mistakes, we just may need to think out of the box to have some success, right?

Maybe your cooking obstacle is goals that are too lofty. How about cooking for one and then multiplying the ingredients if you get more confident and want to serve more people?

Try this one on for size and enjoy. It’s also a great pasta dish for Halloween, as the pasta is black!

Pasta with Fresh Herbs and Ricotta:
Serves one
one cup cooked pasta, I tried Al Dente’s Black Squid Ink Pasta (www.aldentepasta.com)
2 TBS ricotta cheese
2 TBS sauteed mushrooms
one TBS sliced, toasted almonds
1/2 TBS chopped dried cherries
1/2 TBS fresh lemon oregano or any other herb you like such as thyme, oregano, rosemary, parsley, etc.
salt and pepper to taste

Take hot, cooked pasta and stir in the ricotta. Top with the remaining ingredients and enjoy!
