Pasta Salad with Cheese and Peppers and My Son’s Innocence…


Hi everyone! If you take the time and energy to invest in making your food at home, it can be beautiful and wholesome, just like my video game-playing, sarcastic,faux-hawk wearing 8 year old who believed in and waited for the tooth fairy after losing his first tooth. Too sweet to bear.

Pasta Salad

1 1/2 lb pasta, (can use whole wheat Barilla)
1/2 lb small cubes of queso fresco or other mild cheese like mozzarella
2 cups chopped peppers, I used spicy orange piquillo peppers
3 cups salad greens
1/2 cup dressing-more to taste (make a batch of 1 cup olive oil, 1/3 cup balsamic vinegar, 1-2 TBS honey, salt and pepper to taste)
1 tsp salt
1/4 -1/2 tsp freshly ground pepper

Cook pasta, drain it and let cool.
Add cheese, peppers, salad greens and salt and pepper
Pour on dressing and coat salad and pasta
Enjoy!
P.S. This is great to bring to brunches, BBQs or any other type of potluck

    First tooth at 8? Is he a particularly stubborn child?

  2. So sweet! My 13-year old had two teeth pulled by the dentist this week (yuck!) and also waited for the tooth fairy! I'll have to try salad greens in my next pasta salad. 🙂
