Now, here’s a late summer corn and optional shrimp salad for you and yours. This, too, is a gift from you to you and your family and friends. I hope you like it as much as we did!
End of Summer Corn Salad (with Optional Shrimp):
8 ears of corn, cut off the cob or approx. 5 cups thawed, frozen sweet corn
1 cucumber, peeled, seeded and chopped
1/2 cup chopped red cabbage
1/2 cup dressing of your choice, I used my soy maple dressing: http://takebackthekitchen.blogspot.com/2008/03/maple-soy-dressing-and-keeping-it-green.html
1/2 carrot chopped small
3 thinly sliced scallions
1/2 tsp ground black pepper
3/4 tsp salt
1 cup cooked orzo or small pasta or noodle
optional: 2 cups small to medium peeled , cooked shrimp
Mix all of the above ingredients, let chill for at least an hour in the fridge and serve as a side dish or entree if adding the shrimp.
