Hi everyone and Happy Post Halloween! There were a lot of scary things this Halloween but none quite as frightening as my fridge! I was sent a request to clean my fridge as part of the “Reach Right” campaign by Unilever , created so that we may make an effort to store our fridge with healthy items and “reach right” when we delve in there. I was in need of a cleaning so I went along with the suggested cleaning plan. “I Can’t Believe It’s Not Butter!” provided me with a kit to help with my fridge makeove-tupperware, labels, sponges and dish soap. Thanks for that!
Well, I thought this would take only about 15 minutes or so once we emptied the fridge but boy was I wrong. When we decided to dismantle all the compartments and drawers, there was some unsightly stuff to say the least in all the crevices. We wiped everything down with a mixture of water and a few drops of lemongrass oil and my fridge smelled awesome. We threw out a lot of hidden “treats” hiding in the back which made room for all the tasty vittles we went shopping for later. We also filled tupperware with some healthy dips and cut up vegetables and did some labeling.
We will be reaching right, let me tell you! It really does make you want to stock better (healthier) and maintain a clean fridge if you like what you are looking at. Separate the good for you food from the not so good and you’ll stay away from the junk more often. Add a shopping list nearby and you are set!
Since the process took a LOT longer than anticipated , I did not have a chance to eat before I went to my friend Leslie’s house at 12:30. I was starving! When I saw her fancy looking Broccoli cheese rolls, I was psyched. She confessed that they are “the easiest thing ever.” That’s when I took out the Take Back the Kitchen camera and photographed it for all of you (because I love you). Here’s her recipe and don’t forget to reach right! Oh, and btw, I have coupons for you if you cannot eat butter and like the buttery taste of “I can’t Believe it’s not butter”. Broccoli Cheese Roll:
Store bought or homemade pizza dough from your supermarket or local pizzeria
3 cups steamed and then sauteed broccoli florets (or she suggests just putting them in there raw), cut into small pieces, optional sauteed in a tsp or two of olive oil. maybe add some :minced garlic, 1-2 cloves
grated cheese like mozzarella, Asiago or Parmesan-2 cups
Cover a baking sheet with parchment paper and preheat oven to 425 degrees
Take pizza dough and stretch it out with your hands to cover a baking sheet. Try not to let any holes exist (fill them in with pinched off dough if need be).
Mix cooked broccoli with cheese, add salt and pepper to taste and lay on one end of the stretched out dough. Roll it up like a jelly roll and place in oven for 45 minutes or so. Cover if it starts to cook too quickly. Slice and serve hot. Yum!

YUM! Looks great! I have always made the same rolled-up bread for parties using pepperoni/cheese or ham/cheese, but trying something a bit healthier sounds even yummy-er!
