Miso Cod #2 and My Kindred Spirit, Michelle Obama…

Hi everyone and please click on the title of this post to read more. Well, my friend Ariel sent me this article about how Michele Obama is starting an organic veg. and fruit garden on the White House lawn for their food (and their guests’ food). They are primarily doing this because they want to educate kids in D.C and the nation about healthy eating. They are also doing it because they know they need to stay healthy-he has some job ahead of him and they all need all the help they can get (that’s my two cents). I don’t grow my own food yet because I know I will not be able to give a garden the attention it needs. Currently, I kill every plant I own. I do, however, try to be healthy and I have really been making an effort to make more fish. Why, just this week I had some friends over and prepared some tasty cod with miso glaze. You may have read the other miso fish recipe on the blog but this is a different one. Miso Cod #2:

4-6 6oz. fillets of cod or other similar fish

sauce:
1 cup light yellow miso paste (Whole Foods or any Asian Food store)
1/2 cup sugar
1/4 cup rice vinegar

Simmer these three ingredients in a small saucepan while stirring constantly. Keep stirring until sugar dissolves. Let cool and pour into a gallon sized ziploc bag. Add fish, coat with the miso mixture and marinate overnight. The next day, place fish in a roasting pan and bake at 400 degrees for about 20-30 minutes or until opaque. Can serve with mashed potatoes (I made Wasabi mashed potatoes) and some kind of salad. Yum….

    Looking forward to making the cod this week….are the recipes for the wasabi mashed potatoes and the avocado salad also on the blog…can you offer a couple of details on those “recipes”–mainly proportion and whether the mashed potatoes can be the instant kind from Whole Foods?? Thanks!

  2. Love this recipe! and love that Michelle O is doing a veggie garden! It also is very in keeping with the whole “sustainable community” thinking…a garden provides us with something we need and can use, while that vast White House lawn just takes up space and lots of fertilizer!!! go Michelle, go!
