I just got back from Rhode Island where I got to have my yearly visit with my friend Deb from graduate school. She travels across the state to see me and it’s always a treat to catch up on the year. It’s even more of a treat to pick up right from where we left off. Sharing life’s stories, the good and the bad, with people you love are what it’s all about, especially when they bring you some homemade baked goods.
Deb brought us her homemade muffins and wanted to make sure that we credited Mimi who gave her the recipe. The recipe below is for the bread but feel free to make them in muffin tins and bake for less time.

Mimi’s Banana Bread:
4 or 5 mashed overly ripe bananas
1 1/2 cup whole wheat flour
1 tsp baking powder
1 tsp cinnamon
3/4-1 cup sugar (depending on how sweet you like it)
4 Tbs butter, softened
1 cup walnuts
Steps:
Preheat oven to 350 degrees
Combine cinnamon, baking powder and flour
Combine mashed bananas, sugar, butter.
Combine the two bowls and stir in walnuts.
Pour into a buttered 8″x8″ brownie pan and bake at 350 degrees for 50 minutes or until a knife comes out clean.
