Healthy School Lunch #6 with Georgette’s Dad’s Lentil Soup

Hi everyone!

Of all places, I found this lovely story on facebook about baristakids‘ editor Georgette’s Dad’s lentil soup. Funny enough she recalled how she ate it in her school lunches growing up, even though other kids made fun of her for not having a “typical” lunch.

If I didn’t already think Georgette was awesome, she’s has been kicked up a few notches in my book! She was brave enough to listen to her taste buds and care more about her Dad’s love for her through his cooking to not let teasers get in the way of her delicious lunch.

I’ll bet Georgette’s daughters will enjoy this soup at lunch and will be able to stand up to naysayers as well.

This soup is so good, I’m going to share. I ate this so much growing up. I would get made fun of in school because I packed a thermos of it and several pieces of bread almost weekly in grade school. I didn’t care. The rest of the kids were eating cold bologna or pb&j, but I had hot, delicious soup my dad made for me.
Here is my dad’s Greek lentil soup recipe:Nick’s Greek Lentil Soup:1 onion

5 cloves of garlic, minced
1/4 cup of olive oil
1 cup lentils
6 cups water ( or 2 cups stock and 4 cups
water)
1 bay leaf
oregano
kosher salt
ground pepper
2 tablespoons tomato paste
1 tablespoon red wine vinegarSaute onion and garlic in oil. Add all the rest of the ingredients. Bring to a boil. Cover and simmer for about an hour until thick.Eat with lots of crusty thick bread!

  1. ❗ What thermos does she use? I’m worried about plastic and hot soup….metal can be bad with acidic stuff…Also don’t use thermoses that are metal from China….too worried about dangerous metals. would love insight on this. Know your friend Julia Baer-Cooper….or Annie Moyer,can’t remember who but did attend one of your wonderful workshops. I pack a lot of lunches….will try to email photo….usually manchego cheese, some bit of fresh fruit that holds up well, homemade muffin, panini type style sandwich made in morning and wrapped in foil….

    The story was about me bringing a thermos of lunch to school as a child. I haven’t tried a thermos with my girls, as sadly, they’re not big soup fans. But I would go with Gigi’s link to safer thermoses.
