Green Edamame Dip For St. Paddy’s Day or Anytime

Today I had my annual trip to The Side Door, a free hang out spot for middle schoolers from 2:15-5PM. You know, the time when most kids get into trouble…..

Last year I presented them with the shocking green shake for St. Paddy’s Day but today I thought I would mix it up with some award winning edamame dip. They LOVED it!!!!

You all may know the recipe from the GMC Trade Secrets where I won first place in the cooking video contest last Fall but here is the award winning video again!

Do you think your kid would like this? Have you tried it? Please let me know in the comments section!

Edamame Dip:

one lb shelled frozen edamame beans boiled for 5 minutes and cooled
1/2 cup olive oil
1/4 cup rice vinegar
1 TBS agave syrup or sugar
1 tsp salt

Puree all ingredients until creamy in a food processor and serve with vegetable sticks or crackers/pita chips. YUM!!!

  1. Both my kids (6 and 1) go crazy for this recipe. Emily especially (the 1-year-old), as she sucks it right off the cracker, hands me the cracker and says, “more dip? all done cackah!”
