    We are having a party this weekend and have some recovering friends so this “cocktail” looks like a great way to serve festive drinks without including any alcohol. I hope the teens will like it too. Thank you!

Hi everyone! No, this is not Don Draper in the middle of this photo, it’s my friend Todd next to two other dashing friends.
Todd made me a drink the other day that was so tasty and unique that I had to share it with you.
It was festive and allowed non-drinkers to feel like they were having a cocktail.
If you are like me, when I entertain I want everyone to feel catered to and their every libation and culinary need fulfilled.  Todd, you did just that so thank you!

but I adapted that to make it less sweet–and then found that the syrup could be a base for a wider variety of drinks than with just prosecco.
 
Here’s what I did to make about a cup of ginger syrup for the:
“Ginger Snap” cocktail:
8 tsp freshly grated ginger
1/3 cup of sugar (less than half of what is in the original recipe)
1 cup water
Bring the ginger, sugar and water to a boil and reduce to more of a syrup consistency–took about 5 minutes.  Strain the mixture in a sieve to remove the ginger particles.
Add 1 tsp of ginger syrup to each drink.  I found this worked great with prosecco, sparkling water and as a ginger vodka martini (mix with vodka, shake with ice in a cocktail shaker).
I hadn’t expected using it in non-prosecco drinks, so we ran out.  Next time, I will at least double the above recipe.
