I had a great workshop today with some very motivated Celebrity-Home-Chefs to-be! One of the main topics discussed was organization and how important that is for consistent cooking.
We made my husband’s cousin Lori’s delicious and easy Carrot Dip. If you boil or steam the carrots beforehand, it takes a mere 2 minutes to make. It’s all in the planning. Perfect for drop in guests, as a side dish puree, a spread on sandwiches or a dip with pita chips or vegetables.
Spiced Carrot Dip:
1 lb steamed or boiled carrots (until you can stick a fork in them)
3 TBS Olive oil
3 TBS red wine vinegar
2 cloves peeled garlic
1 tsp paprika
2 tsp ground cumin
1/2 tsp ground ginger
Puree ingredients in a food processor or blender until smooth. That’s it! Enjoy!
