Easy Onion Quiche and STILL eating well on Vacation-It is possible!


Hi everyone. As we are smack dab in the middle of our vacation and I really should not be on-line (you know, quality family time and all), I just wanted to share a quick and delicious recipe with you that you can make inexpensively when you are on vacation and have a borrowed kitchen. Even if you don’t have a pie dish, you can make this if you use a ready made pie crust because it comes with an aluminum one.

(Please note in the video below that I packed up onions and other pantry items to bring with us to save money from shopping at our vacation destination. Not to be un-neighborly, but I do not tend to give away my fridge items to others when I leave town-I try to use them all up or freeze them. I even froze a quart of heavy cream. I can’t stand waste!)

Easy Onion Quiche:

One TBS olive oil
2 cups whole milk
5 cups onion or one huge onion, sliced very thinly
6 eggs
salt and pepper to taste
one ready made quiche or pie crust

Preheat oven to 35o degrees or whatever temp. your ready baked pie crust instructs. Pre-bake pie crust and set aside outside of oven if finished before rest of recipe is prepped

In a med. saute pan, heat up oil over med. heat. add sliced onions and cook down until completely wilted , maybe 20 minutes or so. Set aside.

Beat the 6 eggs and milk together and add dash of salt and ground pepper.

Pour onions into the bottom of prepped pie crust and then pour egg mixture on top. Bake for 30-40 minutes or until a knife comes out clean.

note:If pie crust is starting to turn too brown b4 eggs are cooked through, cover with aluminum foil.
