Hi everyone! If you are hosting a BBQ for Memorial Day attending one, or just want to make a tasty salad, I have an easy recipe for you that will thrill the crowd. Make sure to wear sunscreen, remember those we have lost and live life to the fullest. Enjoy your weekend.
Curried Chicken Salad:
2 cups chopped, cooked chicken (you can even buy a roasted chicken and take off all the meat to save yourself some time and cooking)
2 chopped scallions
2 TBS craisins
1/4 cup light or regular mayo
one TBS sour cream, light or regular
1/4 tsp salt
3/4 tsp curry powder
Mix together the cooked, chopped chicken with the mayo and sour cream. Add in the scallions, craisins, salt and curry powder and stir until combined. Keep cool by placing over a large bowl filled with ice and cover with some kind of cover, a net if possible to keep the bugs away. Enjoy!
