You can make these vegan by using Tofu Cream Cheese and earth balance for the butter.
Also, add a blueberry on top for July 4th
Cream Cheese Frosting Stuffed Strawberries:
One quart Strawberries, washed, hulled and a hole dug out in the center where the stem was
One pint blueberries, washed
Cream Cheese Frosting:
8 oz. packaged cream cheese
8 oz. butter, softened
4 cups sifted confectioners’ sugar (so it doesn’t get lumpy)
1 teaspoon vanilla extract
Mix all the frosting ingredients together in a mixer until smooth. Use immediately for the strawberries or store in the fridge
Put the frosting in a ziploc bag, cut a 1/2 cm. hole in the corner of the bag and squeeze the frosting in desired amounts into the strawberry hole, leaving a bit on the outside for decoration.
Add a blueberry on top of the frosting so it sticks
Save leftover frosting in the fridge.
