Just as Usher provided the support and inspiration to Justin, I hope to be your inspiration in the kitchen. I didn’t know how to cook either but I worked hard and learned.
Now, who is my inspiration for gardening? Well, that would have to be Sarah Vogel. She wrote on her blog about how we will be picking ourselves up by our bootstraps and trying a garden in my backyard again this year after our unsuccessful attempt last summer. Read about our efforts here:
I hope she will teach me to grow blueberries so I can make the Cathy Asher modified version of cornmeal blueberry muffins. Stay tuned…..
Corn blueberry muffins
1 1/4 c yellow cornmeal
1 1/4 c flour (I used 3/4 cup white and 3/4 cup white whole wheat flour)
1/3 c sugar
1 T baking powder
1 teaspoon salt
2 large eggs beaten slightly
1 1/2 c milk or buttermilk (I used whole milk)
3/4 c canola oil
1 2/3 c blueberrry
preheat oven to 350
grease tin of 12 muffin…in large bowl mix dry making a well in center stir in liquid ingredients until just combined the batter may be lumpy
fill muffin tin and bake 25 minutes until golden
