Hi everyone. This has been a tough year it seems. So many natural and not so natural disasters affecting so many families. I am thinking of everyone in Oklahoma and hoping they receive the help they need both practically and emotionally.
Once again, this tragedy reminds me of how important it is to spend time with family and friends and make the most of our time with them whether it is at meal time, car time, bus time, or before bed time.
Maybe you will make this tasty treat using ingredients lying around the kitchen. Enjoy your day 🙂
Cilantro-Lime-Orange Chick Pea Salad:
2 cups cooked chick peas-if from a can, fully rinse with water
1 1/2 medium sized carrots, diced very small
1/2 small shallot, minced
1/4 cup finely chopped , washed cilantro
1 TBS olive oil
1/2 tsp paprika
1/2 tsp ground coriander
1/2 tsp pepper
1 tsp salt
1 tsp cumin
juice of one small lime
juice of one small orange
2 tsp honey
1. In a medium sized bowl, combine chick peas, carrots, shallots and cilantro. Set aside
2. In a small bowl, combine the dressing ingredients and whisk together.
3. Pour dressing ingredients over salad and stir until dressing fully coats the salad. Let marinate for at least 1/2 hour in or out of the fridge and serve.
