Cilantro Honey Grilled Chicken and No Need to Pig Out on July 4th!


Hi everyone and happy Independence Day!

Let’s declare our independence from junk food this holiday. Even though we may plan on indulging in a not-so-healthy way, there is no need to only eat unhealthy typical July 4th foods like chips and hot dogs. Why not think out of the July 4th box and try this simple and oh, so tasty chicken recipe for your festivities tomorrow?

I dedicate this recipe to my friend Leslie who I described this recipe to at the pool yesterday. She wanted it “NOW” so here it is:

Cilantro Honey Grilled Chicken:

3/4 lb 1″ X 3″ strips of boneless chicken breasts

Marinade:
1 TBS honey
2 TBS Soy sauce
1 TBS Asian Oyster sauce or Oyster flavored sauce (can get at most supermarkets)
1/2 tsp chili oil (optional)
1/2 cup chopped washed cilantro

Mix marinade in a medium sized bowl and add chicken. Stir to coat and let sit in fridge for at least 15 minutes and up to 24 hours. Grill until opaque, flipping once OR
Bake at 350 degrees for about 20 minutes to 1/2hour or until opaque. Enjoy chopped in salad or plain.

  1. I made 10 pounds of chicken for a crowd of family and friends. So I X10 everything. FABULOUS! I marinated about two hours, which was just fine. Thanks for another wonderful "keeper" recipe. You also inspired us to keep in healthy for this fourth of July meal. No need to pig out. So my friends brought strawberries and blueberries and we had the chicken, homemade coleslaw and grilled corn. Yummmmm.

  2. p.s. I cooked chicken legs (boned) and since I could not find oyster sauce at the market, I bought two cans of oysters, used the juice and mushed up one of the small cans of oysters to put in the marinade. It worked fine.
