Hi everyone and please click on the title of this post to read more. Well, I have been doing a lot of thinking about coffee lately. I had my entire thyroid removed 2 years ago and the only way I remember to take my thyroid meds is by thinking about the fact that I know that I cannot have a cup of coffee until 1/2 hour after I take my meds. Needless to say, I have never once forgotten in 2 years to take my meds. We all know how coffee helps us in the regularity department, but it provides so much more. I have a friend, Nicole Gray, who is writing a book about the social and health benefits of coffee and I have been reading her blog which has added to my increased coffee thoughts. I do a fair amount of cooking with coffee and I like the fact that making something with coffee gives it an adult distinction, almost forbidding kids to touch it, like the old peekfreens cookie commercials (it was a VERY serious cookie!). I also like the fact that knowing how someone likes their coffee served gives you an intimate connection with them and NOT remembering can be tantamount to an insult if you’ve known them for a while (sorry to my friends-I have a bad memory these days).
Anyhoo, the following recipe does NOT have coffee in it but I have been enjoying my coffee with these treats all week. It is my daughter’s “Secret Recipe” Chocolate Chip cookies. She came up with the entire recipe on her own and I must admit that they are way better than my traditional cookies so I am switching over to hers. I am proud of the fact that she was able to come up with a recipe that made baking sense, so to speak. I believe she was able to do this because she had helped me bake cookies so many times before. The modeling and active participation in the kitchen allowed her to absorb the baking information without even realizing it. She is so confident about cooking. My job is done (almost).

Secret Recipe Chocolate Chip Cookies:
Wet ingredients:
1 3/4 sticks softened butter
tsp skim or whole milk (oh, this is the secret ingredient)
tsp vanilla
2 eggs
Dry Ingredients:
2 1/3 cup white flour
1 cup brown sugar
1 cup white sugar
1 tsp baking soda
1/2 tsp salt
2 Cups chocolate chips
Preheat oven to 350 degrees. In a med. bowl, combine all wet ingredients. In a large bowl, combine all dry ingredients. Pour wet ingredients into dry ingredients and stir until well combined. Add chocolate chips.
Line a cookie sheet with parchment paper and drop one TBS size balls of dough but with 2″ space between the next cookie balls. Cook for 10 minutes, remove from oven and quickly remove cookies from hot baking sheet and onto a plate. Enjoy with your coffee!!
