Hi everyone! I had a GREAT day at the Fancy Food Show at the Javit’s Center today with my eating companion, Julie Rosenberg. Try this very large salad for your upcoming parties that is both gluten free and vegan.
Chick Pea Salad with Mango:
1 HUGE 110 oz. can of chick peas-13 cups (from Costco)
1/2 cup extra virgin olive oil
5 scallions, chopped
1 3/4 tsp salt
1 1/2 tsp black pepper
1 cucumber, seeded and chopped
1/2 mango, chopped
1 tbsp dried rosemary
1 tsp smoked paprika
Method:
Combine all the ingredients in a large bowl, stir to combine and chill.
Serves a crowd!
