Ever wonder what to do with those black bananas…..This recipe comes from my great aunt who is 93 years old. She received it from her mother when she was a little girl and she has been making this since at least 1928. It was shown to my mother when she was little and to me when I was little and now to my children.
I am borne and raised in NJ and originally from Harrison . I am a Toxicologist by education and worked in the Pharmaceutical Industry for 11 years along with various other Scientific Positions prior to that. The past Two Years I have been a stay at home Dad. This is my recipe for BANANA CAKE……
Paul’s Banana Cake:
This is for an 8 inch Loaf Pan (bread)
½ Cup Crisco or Margarine or Butter
1 ¼ Cup Sugar or less if you wish
1 Tsp (teaspoon) Vanilla.
½ Cup Sour Milk (1/4 vinegar any kind + ¾ milk)
1 Cup Mashed Banana (about 3 or 4)
SIFT TOGETHER AND ADD TO BATTER:
2 Cup Flour
1 Tsp Baking Powder
1 Tsp Baking Soda
Bake at 350 degrees for 50-60 minutes…..depending on the stove…
After this time you need to watch and check often…..you do not want to dry it out….when you check you should have no batter on the pick. Also do not use more than 1 Cup of banana or the cake becomes too dense and does not rise as well….I hope you all enjoy this recipe…It has been in my family for 3 generations….I am not sure where this recipe originated, but it is a good one. I have many more where this one came from….Let me know how it works???? It has taken me a few times to get it right, so don’t get discouraged.
