Celebrity Chef #18 and Sweet and Crunchy is Her Game….



Hi everyone! We are nearing the end of our Celebrity Home Chef series so please send in your recipes if you want to be included!

Today, I present you with the multitalented mom and real estate agent from Brooklyn, Leslie Kunkin. She works hard at Keller Williams Real Estate agency in Montclair, NJ, but still finds the time to bake these delicious cookies for her daughter, husband and friends. Her mom taught her how to make them and now she is kind enough to teach us. Enjoy!

Chocolate Chip (Cornflake) Cookies:

preheat over to 375 degrees
-with electric beater, beat 1 cup oil, 3/4 cups sugar, 3/4 cups brown sugar, 1 tsp vanilla, 1/2 tsp water, about 1/4 tsp orange extract
-beat in 2 eggs
-in a separate bowl, blend 2 1/4 cups flour (I use unbleached), 1 tsp baking soda, 1 tsp salt
-Add dry to wet and mix by hand
-add 3 1/2 cups crushed cornflakes (fill measuring cup and then pour into bowl through your hand crushin as you pour, so it’s 3 1/2 cups before your crush them)
-add 12 oz semisweet chocolate chips
-drop by heaping teaspoon onto greased or parchment covered cookie sheets
-bake 8 minutes

makes about 100 cookies

(PS – these freeze perfectly and are even good right out of the freezer, so I always make at least a double batch – and we still run out immediately).
