Beautiful Beet Dip and Pour on the Positive Feedback!



Hi everyone! I was so pleased to receive an email from one of my workshop participants with the photo of him and his son. He was so inspired by our session at the Lil’ Tykes Day Care Center in East Orange that he went home and “took back his kitchen” with his young son.

Dang, I love what I do!

It is so nice to receive positive feedback for our efforts, isn’t it? Doesn’t it make you want to just keep moving forward and persevere if you are struggling or in a rut?

Please tell your loved ones that showering you with compliments when you cook will help you in your journey to keep the food coming out of your kitchen.

While you’re in that kitchen, try this healthy and delicious beet dip that I have been sharing with clients and friends. It is gorgeous to look at and you won’t believe the vibrant pink color. Enjoy!

Beet Dip:

1 cup 0% fat Greek yogurt (Fage brand is best)
1 15 oz. can sliced beets or 1 1/2 cups boiled beets
salt and pepper to taste

Puree beets in a food processor. Stir in yogurt (DON’T puree yogurt because it will get watery) and add salt and pepper to taste. Serve with pita chips,healthy crackers or vegetable sticks.

  1. This sounds awesome, Alma! I'm so often left scratching my head, wondering what to do with the beets in my crisper. I will definitely try this (with plain soy yogurt — I'll let you know how it turns out). I recently roasted beats with some olive oil and balsamic vinegar and pureed it with bananas and blueberries. The idea came from an organic baby food blend I bought for my daughter (I would typically make my own but hey sometimes time is tight!). The color is absolutely gorgeous and what an interesting and yummy flavor!
