Hi  everyone! What a week! Tons of cooking and  non-stop action.
I rode in Cycle For Survival for my friends the Colens and everyone affected by rare cancers, myself included, to raise awareness and money for rare cancer research. We donate every year and hope that you will too. Here is their page to donate:

…and here is their daughter Julia’s video about rare cancers:

We also held a Kitchen Swap with Keller Williams Realty and it was a whopping success! Here’s the video and make sure to be there next year!

Now for the recipe that I have been making all week that makes eating on the run a breeze. Enjoy!:

Basil and Goat Cheese Buttermilk Quiche with Chili Crust:

Filling Ingredients:
3 eggs beaten with 1 cup lowfat buttermilk, 1/2 tsp salt and 1/4 tsp of ground black pepper
1/3 cup already caramelized onions (about 2 onions chopped and sauteed over a low flame with 2 tsp olive oil until soft, about 25 minutes or so)
3 ounces goat cheese, chopped
1/3 cup loosely packed basil, washed and chopped

Crust: (adapted from Bon Apetit circa 1993)
1 1/4 cup white whole wheat flour
1 stick softened butter
1 tsp paprika
1 tsp cumin
1 tsp chili powder

Preheat oven to 350 degrees
Combine all the ingredients together by hand or with a mixer
Press the mixture into a pie plate and bake for 10 minutes
Remove from oven but leave the oven on
Let crust cool and place in the crust the caramelized onions, goat cheese, basil and then egg and buttermilk mixture
Bake for 30 minutes at 350 degrees and serve hot
