Banana Bread with Chocolate Chips and Chocolate Glaze

Hi everyone. A while back, my 10 year old got me to buy a subscription of Food Network magazine for her school fundraiser. I must say, there are some awesome recipes in there.

I decided to browse through today and was inspired to make their banana bread when I noticed my blackening bananas in my kitchen. This banana bread is from the May 2011 edition and we hope you like it. It is CRAZY moist.

Banana Quick Bread with Chocolate Chips and Chocolate glaze:

Dry ingredients:
1 1/4 cups white flour
3/4 cup sugar
1 tsp baking powder
1 tsp salt
1/2 tsp baking soda

Combine in a med. sized bowl

Wet Ingredients:
3 mashed very ripe bananas
1/2 cup canola oil
1/2 cup sour cream
1 tsp vanilla extract
2 beaten eggs

1 1/2 cups chocolate chips

Beat wet and dry ingredients together in a Med. sized bowl and then stir until completely combined. Add chocolate chips and mix in.

Pour into a bread loaf pan and bake in a preheated 350 degree oven for 55 minutes or until a knife comes out clean.

Remove from oven and when cooled, spread on the optional glaze below.

Glaze:
Whisk together1 cup powdered sugar, 2 TBS cocoa powder,
2 TBS milk, 1/4 tsp vanilla extract and a pinch of salt

  1. This is an AMAZING recipe. I didn't use the glaze and because I didn't have sour cream on hand I used yogurt with dill in it – leftovers from a visit to an Egyptian restaurant. It was wonderful. Another suggestion is to substitute applesauce for the oil.

  2. yes, even with the dill. I wasnt sure how it would taste but the sweetness overpowered the dill. My family vacuumed a double recipe in less than 12 hours. A keeper for sure!
