As the pandemic continues, so has the baking in our home. For a little novelty, I set my son up with an airbandb.com virtual baking class. I chose a shortbread class that took place in Scotland and we baked with a lovely woman named Fiona. She taught us her family recipe of shortbread and I was pleasantly surprised with the results. I had never used cornstarch in my shortbread and it made the cookies truly melt in your mouth. If you get a chance, check out her classes !
Authentic Scottish Shortbread:
1 cup Plain Flour (All purpose flour)
1/2 cup Cornstarch
1/2 cup Butter (Room temp)
1/4 cup Sugar
Steps:
Heat the Oven to 330 degrees.
Put all ingredients in a medium bowl.
Cut up the butter into small pieces in the flour and sugar, then knead in bowl until it forms a smooth paste.
Turn onto a floured work surface and roll out to a thickness of ½ inch.
Cut into circles.
Prick shortbread all over with a fork.
Chill in fridge for 15 minutes.
Bake shortbread for approximately 10-15 minutes, or until a golden color.
Sprinkle with some sugar once out of the oven.
Serve.
